Bacon Broccoli Salad With A Creamy Honey Dressing

I’m not really much of a broccoli eater but when I tried this salad it certainly exceeded my expectations! This salad is truly amazingly good! The honey in the dressing balances out the vinegar and adds just enough sweetness to the salad without even detecting honey as an ingredient used for the dressing. The combination of vegetables in this salad all go so well together and the dressing just tops everything off! If you can only dip your finger in the dressing alone, you will probably know what I am talking about. The crisp bacon, red onion, grapes, broccoli florets, supple cherry tomatoes and raisins are all tossed in a mayonnaise based dressing with a hint of vinegar and honey. You might need to make a double portion of the dressing, not only because it’s super good but the quantity of the broccoli may also vary. I used 2 small broccoli florets but each bunch of broccoli may have less or more florets so you really need to look out by eye.

I was approached by a church member (thank you Marina K!) who was so nice to have shared this recipe with me. She suggested this salad to me and I can totally see why (it’s seriously real good!) I tried it out and am glad to say it’s definitely a keeper! The next time you want to make a tasty and nutritious side, make this salad!

P.S. The dressing will slightly soften the broccoli naturally so don’t worry you do not need to steam or cook the broccoli in this recipe.

Ingredients:

Crisp up 5 slices of bacon any method you prefer. Make sure the bacon is dark brown and crispy we do not want soggy and stretchy bacon in our salad. I like to bake my bacon in the oven for 20 minutes or so at 400 degrees F, on foil. It’s much easier to clean up and bacon is crisp without smoking up your house.

Finely chop the cooked bacon; place in a large bowl.

Slice the grapes and cherry tomatoes in half lengthwise; add to bacon.

Finely Dice half of a purple onion and add to the bacon mixture.

Cut the stem of the broccoli off as close as you can to the broccoli florets and separate broccoli into bite size pieces. Add the broccoli and raisins to the bacon and toss all together.

Combine the mayo, honey and vinegar and whisk until creamy. Add to the broccoli mixture and toss to coat.

Ingredients
  • 2 small bunches of broccoli
  • 5 slices crisp bacon slices
  • ½ red onion
  • 3 tbsp raisins
  • ⅓ cup cherry tomatoes
  • ½ cup purple seedless grapes
  • DRESSING:
  • 1 tsp vinegar
  • 1 tsp raw honey
  • ⅓ cup mayo
Instructions
  1. Crisp up 5 slices of bacon any method you prefer. Finely chop the cooked bacon; place in a large bowl.
