Bacon Olivye Salad {Bacon Potato Salad}

If you are not familiar with the olivye salad, it is a creamy potato salad usually tossed in mayonnaise with some bologna, dill pickles and many more nutritious tender veggies. There are many different variations to this popular Slavic salad. However this olivye version has a little twist to it. It is not your common classic olivye salad although the concept is so similar just using a different blend of veggies…I got this recipe from my cousin who is so creative and such an amazing cook (literally almost anything she makes tastes so good), thank you Luba. She had served this salad for dinner one time and I couldn’t resist to not ask how she made it.  Since then, I have made this salad many times and seem to really like this version. The crisp bacon goes so well with the tender veggies and crunchy bell pepper which are all tossed in a creamy mayonnaise. If you like to try new salads and get creative this one is defiantly going to be a hit as the flavors meld in so well together creating a delicious creamy salad similar to the classic olivye salad but with a little twist. Ingredients:

Preheat oven to 400 degrees F. Line a baking sheet with foil and place 7 slices of bacon on the foil. Bake bacon in the oven for about 20 min or until crisp.

While bacon is baking place potatoes, carrot and eggs in a medium-sized saucepan. Cover with water and bring to a boil over high heat; reduce heat to medium-high and boil eggs for 7 min. Remove eggs after 7 minutes and place in cold water. Continue boiling the carrot and potatoes until tender. (I removed the carrots shortly after I removed the eggs and potatoes took about another 20 min after I removed the eggs, just check by piercing the veggies, if the knife goes in easily it’s done.) When potatoes and the carrot are done boiling remove and cool.

Meanwhile chop the bell pepper, onion and crush the garlic. Place into a large bowl.

When the bacon has finished cooking remove from the baking sheet and place on a paper towel to drain any excess fat. Take the eggs, carrot and the potatoes after they have cooled and scrap the skins off the potatoes and carrot. Remove the shells from the eggs. Chop the potatoes, eggs, carrot and bacon and add to the bell pepper mixture.

Add the dill, salt, ground black pepper, corn, and mayonnaise to the bowl and toss all ingredients together. Add more seasoning to taste if needed. I like my salad to be creamy, but you can certainly adjust the mayo to your liking, start with 1/2 a cup and add more to your liking.

  • 7 bacon strips

  • 2 tbsp fresh dill
  • 1 clove garlic
  • 1 red onion
  • ⅓ cup of frozen whole kernel corn
  • 1 cup mayo
  • ¾ tsp salt
  • ⅛ tsp pepper
