Easy Gouda Mac & Cheese

I was inspired to make gouda mac & cheese after my brother sent me a picture of this dish that he had tried in a restaurant. It looked so creamy and the name “gouda” mac & cheese sounded good to me. I tried to recreate the one I saw in the picture that looked so rich, creamy and orange. 

My first attempt required some baking time which resulted in dry pasta since the sauce just disappeared into the pasta. After the third attempt I got it to look orangey creamy and delicious! If you haven’t tried gouda cheese you really should as it’s slightly smokey and very mild in taste. The cheese will not over power the dish in this recipe so don’t hesitate to try this version of mac & cheese.

Ingredients you will need:

Boil pasta according to the package instructions; drain and toss in a few tbsp of oil to prevent pasta from sticking. Cover and set aside.

In a medium size saucepan melt butter; add flour and spices whisking for about a minute. Slowly add the milk and half & half. Continue whisking then add the cheeses and whisk until sauce has slightly thickened. Simmer on low-med heat for about 5 minutes or until sauce has thickened.

Toss sauce with cooked pasta and serve.

Ingredients
  • 4 cups pipette pasta
  • 1½ cups half & half
  • 1½ cups milk
  • 4 tbsp butter
  • 4 tsp flour
  • ¼ cup of a shredded cheddar cheese blend
  • 1 cup gouda cheese shredded
  • 1¼ tsp salt
  • ⅛ tsp white ground pepper
  • ½ tsp ground mustard powder
  • 1 tsp paprika
