Stuffed Cabbage Rolls {Golubtsi Recipe}

Golubsti is a well-known stuffed cabbage dish in the Slavic culture. Wilted cabbage leaves are stuffed with a meaty rice mixture and bake away to deliciousness. This is our families way of making these tasty rolls and yes these are made all from scratch. But don’t let that stop you from making a pot of these because this makes for one tasty batch. Besides it’s not really that much more of a hassle as a sauté mixture is usually necessary for any golubtsi recipe. Try this homemade version and you may just not want to use jarred sauce again as these taste different in a completely different level.

Ingredients for Golubtsi:

  • 1 Lrg Head of cabbage (6 1/2 lbs)
  • 1 1/4 cup jasmine rice, uncooked
  • 2 1/2 lbs ground pork
  • 1 lb ground chicken
  • 1 tbsp salt
  • 1/2 tsp ground pepper

Saute:

  • 1 onion, diced
  • 2 Carrots, grated
  • 1 (15 oz) can tomato sauce
  • 1 tbsp sour cream
  • 2 tsp Vegeta
  • 1/2 tsp sugar
  • salt & pepper to taste

Sauce:

  • 1 cup water
  • 2 tbsp vinegar
  • 2 tbsp ketchup
  • 2 tbsp sour cream
  • 1/2 tsp sugar
  • 1/4 tsp salt

How to make Golubtsi: 

  1. Combine rice and 1 1/2 cups of water; bring to a boil, reduce heat to low and cook for 20 minutes. Set aside to cool.
  2. Sauté onion and carrots in a few tbsp of oil until nicely browned. Add remaining sauté ingredients and simmer over low heat until well combined. Set aside to cool.
  3. In a large bowl combine the meat mixture, sauté mixture, cooked rice and salt & pepper; mix throughly. Set aside.
  4. Carve out the core from each head of cabbage, by cutting a circle around the core and going half way in.
  5. Wilt the head of cabbage in boiling water for 5-8 minutes then carefully remove the softened leaves one by one and transfer to a large tray.

6. Remove the stem off of the biggest leaves and just lightly slice off the top of the stem off the smaller leaves. (As pictured.)

8. Stack rolls into a cast iron pot; drizzle a few squirts of ketchup, sprinkle some diced onion pieces and butter slices over the top of each layer. Whisk together the sauce ingredients and pour over cabbage rolls. Bake rolls in a 400 degree F oven for 1 hr then at 350 degrees F for another hour.
