Salmon with a Seafood Shrimp & Mushroom Alfredo

I’m not really a big fish eater but does this taste amazing! Atlantic salmon fillets are seared and then topped with a creamy and absolutely delicious seafood alfredo sauce that happens to have plump shrimp and tender bella mushrooms…. Yes all that goodness in one meal.

If you haven’t tried alfredo with fish yet, you really should. It makes a beautiful presentation and tastes absolutely creamy and delicious. This combination pairs so well together and creates an amazing contrast of textures in the dish. The salmon fillets are marinated very quickly (while you prep other ingredients) and makes delicious fillets. Fish can cook quicker than you may think so good timing is necessary for a well done fillet. I hope this dish may give you an idea of how to prep salmon in a new and tasty way. INGREDIENTS NEEDED:

  1. IMG_5161In a medium sized bowl whisk 3 tbsp olive oil, 1 tbsp fresh parsley, 1/8 tsp of salt & pepper, 1/8 tsp old bay seasoning and 1 tsp of soy sauce. Add washed and patted dry salmon fillets and allow to marinade while you prep other ingredients.
  2. salmon marinade retakeShell or remove the tails from the shrimp and slice cleaned and patted dry mushrooms. Season both shrimp & mushrooms with salt and pepper to taste.
  3. IMG_5223Heat a large non-stick skillet over medium high heat and sauté the mushrooms until tender and reduced in size. Set aside.
  4. retake shrimp n mushroomsIncrease the heat to high heat and in the same skillet sear the shrimp on both sides. Shrimp cooks very quickly, so be very careful not to over cook them. (Just until they get pink.)
  5. Remove the shrimps and set aside. Making sure the heat is on high, sear the salmon fillets for 3-4 min on each side. You can reduce the heat after you have placed the salmon on the skillet just keep your eye not to burn the fillets. This technique helps with a nice crust.

  7. Remove the fillets and place on paper towels; set aside.
  8. In a medium sized saucepan melt 4 tbsp of butter and then add 2 tbsp of flour, whisking until fully incorporated. Slowly add the cream, cheeses, sour cream and seasonings. Continue whisking until cheese melt. (Sauce will be slightly thick at this point.)
  9. Add 1/3 cup of water and 1 tbsp of fresh parsley; stir to combine and allow to heat through over med-low heat. Add the shrimps and mushrooms. Turn off and keep warm until serving.

Serves: 4-6 servings
Ingredients
  • 4 (4oz) Salmon fillets
  • 9 oz Bella mushrooms
  • 12 oz raw large shrimp
  • salt and pepper to taste
  • ALFREDO SAUCE:
  • ⅔ cup heavy cream
  • 4 tbsp unsalted butter
  • 2 tbsp flour
  • ¼ cup colby & monterey jack blend cheese
  • ¼ cup grated parmesan cheese
  • 1 tbsp sour cream
  • 1 oz cream cheese
  • ⅛ tsp of garlic powder
  • ⅛ tsp old bay seasoning
  • ⅓ cup water
  • 1 tbsp parsley
  • MARINADE FOR FISH:
  • 1 tbsp fresh parsley
  • 3 tbsp olive oil
  • ⅛ tsp salt & blk pepper
  • ⅛ tsp old bay seasoning
  • 1 tsp soy sauce
Instructions
