Roasted Red Potatoes

These buttery Roasted potatoes are so quick to prepare and bake away to tenderness. The seasonings are balanced out nicely with the slightly sweet red potatoes which creates one delicious side.Red potatoes are slightly on the sweeter side. They bake wonderfully and make a great side. This recipe is so versatile as you can substitute the butter with olive oil and change up the herbs and spices to your liking. I happened to bake this along with roasted duck as I wasn’t in a big rush to put these on the table. But if you were to serve this in a timely manner you can boil the cubed potatoes for 8 minutes then toss them in the herbed butter mixture and bake until golden brown in a 410 degree oven for about 25 minutes. Which ever method you prefer is totally up to you but if you need these before an hour I highly recommend the boiling method to shorten the cooking process. Serve this with a dollop of sour cream and enjoy!

Ingredients:

1.) Peel, wash and cube the potatoes; place into a large bowl and set aside.

2.) Add the herbs and spices to the melted butter and stir to combine.

3.) Preheat the oven to 400 degrees F.

4.) Pour the buttered mixture over the potatoes and toss to combine.

5.) Spread seasoned potatoes out evenly in a large baking sheet and bake for 1 hour and 20 minutes or until tender and golden. (Baking time may vary depending on the chunks of the potatoes. Avoid baking to long as that can result in dry potatoes.)

  • 2½ lbs red potatoes
  • 3 tbsp unsalted butter, melted
  • 1 tbsp fresh parsley
  • ⅛ tsp garlic powder
  • 1 tsp garlic salt
  • ½ tsp vegeta
  • ½ tsp ground black pepper
  • ⅛ tsp salt
