Caramel Filled Brownies With Cherry Sauce

These fudgey brownies are stuffed with melted caramel candies and then topped with a dark cherry sauce creating one rich and sweet brownie. My husband commented that these were the best brownies that he has ever tried! 

I’m not really a brownie person but these were very rich and fudgey indeed. They taste even better when cooled and if you want to make things easier you can certainly use two boxed brownie mixes instead. I like my brownies very rich and fudgey instead of a cake-like texture so my ratio on ingredients were adjusted to my likings. However the more eggs and flour you add to the brownie batter the more of a cake-like consistency you may achieve (or so I’ve read.) Serve with a dark cherry sauce, ice cream or both and enjoy!

Ingredients for Brownie Mix:

1.) Preheat the oven to 350 degrees F. Line a 13″ by 9″ pan with aluminum foil, leaving a 1″ overhang and coat with cooking spray. Set aside.

2.) Whisk the dry ingredients and then add the wet ingredients in the order given. Stir with a spoon and fold in walnuts.

3.) Spread half of the batter evenly over the prepared pan and bake for 25 minutes.

INGREDIENTS FOR FILING AND CHERRY SAUCE:

4.) Unwrap caramel candies and place into a microwave safe bowl along with heavy cream. Microwave for 1 minute; remove stir and repeat until caramel is completely melted and smooth (no more than 2 minutes.)

5.) Spread the melted caramel mixture over the partially baked brownie mix and top with remaining batter. Bake an additional 40-45 minutes or until set.

7.) While brownies are baking make the cherry sauce; place the cherries, sugar, butter, and vanilla extract into a small saucepan. Heat over medium heat until liquid releases and mixture simmers. In a small bowl combine the water and cornstarch and add to the cherry mixture. Heat through until bubbly and remove from heat.

8.) When brownie batter has finished baking; remove from the oven and cool completely. Then remove from the pan using the foil over hangs, and cut into squares. Serve with topped cherry sauce.

  • 1 tbsp water
  • 1½ tsp cornstarch
