Shchavel Borscht {щавель Борщ} — Sorrel Soup

Shchavel Borscht (щавель Борщ) is a popular Ukrainian green soup made from a ton of nutritious sorrel leaves. Sorrel leaves are sour to taste and create one amazingly delicious and healthy green soup. 

Spinach is a very close alternative to sorrel leaves. However sorrel leaves were a very common plant to grow in the in a Slavic garden, which is why this soup is well known among Slavic people. The sorrel leaves give off a sour-y taste and with the other ingredients they make for one really good bowl of soup. This is my mothers classic recipe to this popular soup and hopefully it can become a favorite in your family as it is ours.

Ingredients for Sorrel Borscht:

  • 20 cups water
  • 1 lb pork loin chops (any meat)
  • 5 large potatoes
  • 1 onion
  • 1/4 cup barley (перлова крупа)
  • 4 cups (packed) chopped sorrel leaves
  • 4 eggs, chopped
  • 1 tbsp salt
  • 1 tsp ground black pepper
  • 1 tbsp Vegeta (all purpose seasoning)
  • 3 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1/3 cup sour cream

1. Bring water to a rolling boil in a large pot. Add pork  pieces (lightly seasoned to taste) and reduce the heat to medium-low. Simmer meat for 45 min. Then add the eggs to the water and boil eggs for 8 minutes; remove eggs and run under cold water. Set done eggs aside.

2. Adjust the heat to medium; add barely to the simmering meat and boil for 15 min; then add the potatoes and continue to boil the soup for 20 more minutes.

3. While soup is simmering, stir together the mayonnaise, sour cream, and 1 chopped egg in a small bowl.

4. When the potatoes are almost done add the sorrel leaves, salt, black pepper, vegeta and 3 chopped eggs to the pot. Simmer soup for another 15 minutes then turn off the heat and add the mayonnaise mixture. SERVE.
