Super Easy Chicken Quesadilla’s

Chicken quesadilla’s got even easier to make… No sautéing, no cooking any ingredients, no big list of ingredients. All you need is tortillas, grilled chicken pieces, fresh salsa and cheese to make incredibly delicious restaurant style quesadillas. 

My sister Inna who shared this easy and fast recipe with me, uses fresh pico de gallo sauce instead of salsa. I happened to try this version with fresh salsa and the results come out amazing, as well! Fresh salsa or pico de gallo sauce is a must! Please do not use jarred salsa. You can find fresh salsa (or pico de gallo sauce) in the fridge section of most grocery stores, it gives the quesadillas a refreshing taste and makes for a wonderful dipping sauce so don’t skimp on that ingredient. I love that you don’t have extra pots and tools to clean up as the ready ingredients make for a huge shortcut in preparing these. I do hope you try these out to really taste the salsa deferential.   • 8 ct Large Flour tortillas
  • 18 oz fresh Mild Salsa
  • 12 oz Ready Grilled Chicken Pieces
  • 2 cups of a Cheddar Blend Cheese, shredded
  • cooking spray

IMG_3902How to Make Chicken Quesadilla’s:

  1. Combine 1 cup of salsa and the chicken pieces. Set aside.

2. Place a few heaping tbsp of the chicken/salsa mixture onto the lower half of a flour tortilla (3-4 tbsp.) Then top with a handful of cheese and fold tortilla in half creating a half moon shape; set aside.

3. Preheat a large non-stick skillet over medium- low heat.

4. Spray skillet with cooking spray and place two tortillas into the skillet; cover and heat through on each side until cheese melts and exterior is golden.

5. Slice each tortilla into 4 pieces and serve with the remaining salsa.
