Chipotle Chicken Enchiladas (Roll-ups)

Soft flour tortillas are stuffed with a tasty chicken sauté mixture, then rolled and topped with a creamy chipotle sauce and baked away to fluffiness.  I must say this is one yummy taco dinner!

You have yet to try these delicious chicken roll-ups! There actually pretty easy to make as all the cooking takes place in one frying pan.  The chipotle flavors to these little enchiladas create a mild and yet pleasantly enjoyable meal, without any harsh or spicy after tastes. So this could be a kid-friendly and versatile meal as its quite mild in taste.

Ingredients:

  • 1 1/2 lbs ground chicken
  • 2 green bell peppers, coarsely chopped
  • 1 onion, sliced
  • 2 tbsp oil
  • 2 tbsp of McCromick Chicken taco seasoning (any mild taco seasoning)
  • 2 tsp Hellmann’s Chipotle Mayonnaise
  • 1/3 cup of mild fresh salsa
  • 2 cups of shredded cheddar cheese, plus more for garnish
  • 15 small flour tortillas

SAUCE:

  • 1/2 cup Hellmann’s chipotle mayonnaise
  • 1/3 cup sour cream
  • 1/2 cup water

IMG_8565Note: I prefer the McCromick Chicken taco seasoning mix over the mild taco seasoning but either will work. 

How to make Chipotle Chicken Roll-ups:

  1. Sauté the peppers and onion in a wide shallow frying pan with 2 tbsp of oil over med-high heat.
  2. Add the ground chicken and 2 tbsp of taco seasoning and continue to sauté until the meat cooks through.
  3. Then add the chipotle mayo and salsa; continue to sauté (about 5min.)
  4. Remove from heat and add 2 cups of cheddar cheese; stir.

5. Wrap 15 flour tortillas in damp paper towels and microwave for 3 minutes. (Warm tortillas help prevent cracks when rolling.)

6. Using a 1/4 cup measuring scoop, scoop the chicken mixture onto the lower half of the tortilla and roll up.

7. Place seal down onto a 13 by 9–inch baking dish and continue to roll and stack.

8. Combine the sauce ingredients and pour over the top of the enchiladas.

9. Bake in a 350 degree F oven for 30 minutes covered. Then uncover and sprinkle cheddar cheese over the center of the stack and bake again until cheese melts.
