Juicy Pork & Potato Kotleti (Croquettes)

These pork kotleti (croquettes) are truly so juicy, fluffy and delicious. I don’t know exactly what the potato does but these turn out amazing. Fried and then stacked pork patties are baked in some water creating REALLY juicy kotleti. 

This is my mother-n-laws kotleti recipe that I have become to love. I just can’t get over the juiciness of these fluffy pork croquettes. I seriously recommend taking the extra step to bake these because they are just not the same as the skillet fried version. Feel free to convert these to tefteli by adding some cooked rice to the meat mixture and baking in a favorite tomato sauce or stick to this basic version and enjoy.

Ingredients for Juicy Pork & Potato Kotleti: 

  • 3 lbs ground pork
  • 1 small onion
  • 1 small potato
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 2 slices bread
  • 1 tsp salt
  • 1/4 tsp ground pepper
  • 1/2 cup flour (for dredging)
  • 1/2 cup oil (for frying)

How to make Pork & Potato Kotleti:

  1. Throughly mash the bread in milk and set aside.

2. Finely grate the onion and potato in a large bowl.

3. Then add the mashed bread mixture and the remaining ingredients (except for the oil and flour.) Mix to throughly combine.

4. Using a 1/4 cup measuring tool, scoop out the meat mixture and dredge lightly into flour. Form into oval patties slightly flattening and transfer to a tray.

5. Fry patties in a pre-heated skillet over med-hi heat in 1/2 cup of oil for 3 minutes on each side. (No need to cook throughly as they will continue to cook while baking.)

6. Stack into a baking dish. Pour 1/2 cup of water over the kotleti. Cover and bake for 25 minutes in a preheated 350 degree F oven.
