Mall Pretzels (Copycat Recipe)

This pretzel recipe was the closet I ever got to those super amazing pretzels sold at the mall. I have tried a pretty good recipe before, but not quite like the mall ones. And after attempting to make two different batches in one day, I noticed a huge difference! 

My first batch was pretty much the same as the second, except I decided to add baking powder to my second batch and let me tell you they came out so fluffy, so soft and so close to those mall pretzels, that I was just amazed! I even texted my friend the same day to share the excitement because it’s truly exciting when you have a successful trial of attempting to replicate something (maybe that’s just me.) You seriously need to try these pretzels! And since this recipe only makes 6 pretzels you may want to double the recipe and make more because these are so good fresh out the oven!

Ingredients for Pretzels:

  • 1/2 cup whole milk
  • 1/2 cup water
  • 2 teaspoons yeast
  • 2 tbsp brown sugar
  • 2 tbsp butter, melted
  • 1/2 tsp salt
  • 1/2 teaspoon baking powder
  • 2 cups + 2 tbsp all-purpose flour

DIPPING:

  • 2 cups warm water
  • 2 tbsp baking soda

TOPPING:

  • 6 tbsp butter, melted
  • coarse salt

How to make soft Pretzels:

1. Combine the milk and water into a measuring cup and heat in the microwave for 45 seconds or until warm. Add the yeast and allow to proof for 15 minutes.

2. Place the yeast mixture, sugar, salt, baking powder, melted butter and 2 cups of flour into the bowl of a stand mixer and knead over low speed until dough comes together. Then knead over medium speed for 7 minutes adding more flour (about 2 tbsp) for dough to not stick to the sides. (Dough should be slightly tacky)

3. Grease bowl well coating the dough and sides. Then cover and allow to rise in a warm place for 30-45 minutes.

4. Transfer dough onto a lightly floured surface and cut dough into 6 equal pieces.

5. Roll and stretch each piece into a 30″ rope. Then holding the ends, make a U-shape and twist twice. Pinch ends to the pretzel.

6. In a shallow bowl dissolve the baking soda in warm water. Dip Pretzels in the baking soda solution and immediately place onto a towel to pat off any excess water.

7. Place pretzels onto parchment paper and sprinkle with coarse salt. Bake in a preheated 410 degree F oven for 8 minutes.

8. Dip warm pretzels in 6 tbsp of melted unsalted butter and enjoy! IMG_9352
