Panera’s Broccoli Cheddar Soup {Copycat} Recipe

You have yet to try this amazingly creamy and delicious Broccoli Cheese Soup! This recipe is the copycat version Panera Bread serves and I’ll let you be the critic to say if this tastes close enough to there version. 

After some research and strolling down the ingredient list of Panera’s Broccoli Cheddar Soup, I came to the conclusion that this recipe should work in achieving there version. I must say I am VERY pleased with how creamy, smooth and delicious this soup turned out, that I’ll let you decide if this tastes like theres. Pasteurized cheese is a must to create that seamless smooth and velvety creamy cheese soup (as some shredded cheddar cheese could separate and look grainy at times), plus it was on the ingredient list of Panera’s version so be sure to use that. Only a little is used along with some shredded cheddar cheese so don’t worry your soup won’t taste pasteurized. Give this recipe a try, I’m sure it won’t let you down.

  • 3 cups of broccoli florets
  • 1 cup carrots, julienned or cut into strips
  • 1/2 of a medium sized onion, diced
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 3 cups water
  • 3 tbsp flour
  • 3 tbsp butter
  • 1 chicken bullion cube
  • 8 oz of Pasteurized Cheese
  • 1 cup shredded cheddar cheese
  • 1/4 tsp ground mustard
  • salt & pepper to taste

IMG_9976How To Make Broccoli Cheddar Soup:

  1. In a large saucepan sauté the onion in 3 tbsp of butter over medium heat until browned. Add the flour and stir until flour incorporates into the butter.

2. Slowly add the water and milk, whisking until mixture thickens (about 8 min.)

3. Then add the broccoli and carrots and continue to simmer over med-low heat until tender (10-15 minutes.) Feel free to pulse your soup a few times with a hand blender, towards the end of this cooking stage to achieve a slightly thicker consistency (optional.)

4. Add in the cheeses, ground mustard and salt & pepper to taste; whisk until smooth and bubbly over low heat (about 5-10minutes.)

5. Once the cheeses melt add in the cream and heat through. Serve.
