Creamy Tortellini Alfredo

Tortellini alfredo

Plump cheese stuffed tortellini are tossed in a creamy alfredo sauce that create one quick and tasty dinner. Having a big bag of frozen tortellini on hand is a great way to create many different quick and easy meals. The’re done cooking in 5 minutes and while they boil away a super quick and tasty alfredo sauce is made. These are so quick to prepare and taste like a restaurant style meal, if you ask me. Serve these with some warm bread and a garnish of parmesan cheese and you have one gourmet dish!

Ingredients for Tortellini Alfredo:

  • 1 lb tortellini
  • 2 tbsp butter
  • 2 tbsp flour
  • 3 cloves garlic, minced
  • 1/8 tsp crushed pepper flakes
  • 2 tbsp parmesan cheese
  • 2 tbsp whipped cream cheese
  • 3/4 cup heavy cream
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • tomato & fresh basil for garnish

IMG_2100How to make Tortellini Alfredo:

  1. Cook tortellini according to package instructions; set aside.
  2. Meanwhile, in a small saucepan melt butter over medium-high heat. Add the garlic and pepper flakes and cook for 1 minute until fragrant.

3. Whisk in the flour until golden in color (about 1 minute.)

4. Gradually add in the water and cream and continue to whisk until mixture slightly thickens.

5. Add in the cheeses, salt & pepper and heat through.

6. Toss the alfredo sauce with the tortellini and garnish before serving.
