Lazy Stuffed Pasta Shell Dinner

The name “lazy stuffed shells” pretty much mean you don’t have to stuff any shells. Super fast dinner (literally can be done under 20 minutes) and very kid friendly–“my kids said it was so good”.You still get a little cheese in almost every bite as a ricotta cheese mixture is dolloped right over the cooked shells. No sautéing and everything is layered in a skillet and broiled over low heat until melty and hot.   • 2 1/2 cups medium shells (about half a box)
  • 1 1/4 cup any pasta sauce (about half a 24 oz jar)
  • 1/2 cup ricotta cheese
  • 1/4 cup parmesan cheese
  • 1 egg
  • 2 slices provolone cheese

How to make Lazy Shells:

1. Cook pasta according to the package instructions; drain.

2. Mix together the ricotta cheese, parmesan cheese and egg; set aside.

3. In an oven safe skillet or baking dish place 1 cup of pasta sauce onto the bottom and top with pasta.

4. Then make a few dollops from the remaining 1/4 cup of sauce and dollop the ricotta cheese mixture. Top with provolone cheese (I cut mine out with a kiddie cup to match the dollops) and broil under low heat until cheeses melt and heated through (about 10 minutes.)
