Grilled Chicken Crostini Melts (Canapés)

grilled,chicken, crostini

These juicy grilled chicken crostini’s make a great little appetizer that tastes absolutely delicious! My mother’s creativity didn’t fail on these little hot sandwich melts…Grilled chicken pieces are tossed along with some diced tomatoes, fresh scallions and a shredded cheese blend. The mixture is lightly seasoned and then combined with a creamy mayonnaise, creating one juicy and tasty spread for baguette slices. Store bought grilled chicken pieces will work, but I went ahead and grilled a few chicken breasts. These crostini bites definitely make a yummy appetizer and my mother has been complimented on these many times. A must make!
