Russian Mushroom Canapés Recipe (Creamy Garlic Mushroom Spread)

You may have spotted these little savory mushroom appetizers at a Russian or Ukraine gathering but if you haven’t, you can now try to replicate those tasty little canapés because there really tasty. 

Finely diced (or grated) mushrooms are sautéed, cooled and mixed with mayonnaise, garlic, and seasoning, to create one amazing spread that you can eat over bread. These mushroom appetizers are simple and easy to make and toasting the bread slices can be completely optional. Pair this mushroom spread with chewy fresh french baguette slices and you have one yummy appetizer.

  • 32 oz white mushrooms, finely diced or grated
  • 1/3 cup mayonnaise
  • 1 tbsp minced garlic (about half a head of garlic)
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 french baguette

Directions:

1. Sauté the mushrooms in butter in a deep skillet over high heat until the juices evaporate (10-15 min.) Season with salt and transfer into a bowl to completely cool.

Note: The mushrooms will shrink a lot during the sautéing step so don’t worry if the amount seems to be much before frying. 

2. Add in the mayonnaise, garlic and pepper. Keep refrigerated until serving.

3. Spread a thin layer of spread onto each slice of french bread and serve as canapés.
