Now, you do need to stir together some ingredients but that can be done with a fork unless you insist in using a whisk, the choice is yours. Call it mock hollandaise sauce or “Hollandaise Sauce” this recipe is what I have been looking for in a Hollandaise sauce after trying other recipes. My recipe calls for vinegar but lemon juice can be an alternative. I prefer vinegar over lemon juice as this gives a nice tart taste without a strong lemony flavor. It’s done in the microwave and tastes AMAZING! Tarty, creamy, (only two Tablespoons of) BUTTER is how I would describe this. There is no strong yolky taste and this recipe is not bland as the tartness stands out without an over powering lemon taste. This recipe can garnish about 4 poached eggs.

I have finally achieved a hollandaise sauce I enjoy and you probably can’t go wrong with this recipe because even if it curdles in the microwave a few stirs and this sauce smooths out wonderfully! A total keeper recipe in my notebook because of the taste and ease of the process! A  must make if your on the hunt for a good hollandaise sauce!

  • 1 egg yolk
  • 2 tbsp butter, melted
  • 2 tbsp heavy cream
  • 1 tsp vinegar
  • 1/8 tsp dijon mustard
  • salt & cayenne pepper to taste

Directions:

1. Melt butter in the microwave (about 30 sec.) Stir in egg yolk then add the vinegar and cream and stir until well combined.

2. Microwave up to one minute until mixture thickens, checking and stirring every 15 seconds.

3. If your mixture curdles like this, no problem just keep on whisking until it gets smooth.

4. Whisk in mustard and salt. Garnish sauce with cayenne pepper before serving.

Note: If you prefer a thinner hollandaise sauce just add 1 tbsp of melted butter and smooth out. You can also reheat this hollandaise sauce.
