Crunchy Nutty Fingers Cookies

Snowball cookies, Nutty Fingers, Russian Tea cookies are all very similar cookies to these incredibly easy and flakey cookies. My 7 year old daughter made these (their that easy!) 

I discovered this recipe in an Amish Cooking book that read; “Here is an easy recipe for little girls” above the recipe. The recipe is originally called Nutty Fingers but I found similar cookies by different names.

My daughter has made these before but this time she used 2 sticks of fat unknowingly when she only had to use 1 stick of margarine (1 stick of butter and 1 stick of margarine were used for these.) More flour was added as the original recipe uses 1 stick of margarine for 1 cup of flour but this cookie resulted in MUCH flakier and crunchier cookies!

I’m very pleased with the outcome of these easy cookies and highly recommend them for a quick cookie recipe.

  • 2 sticks of margarine (recommend 1 stick of butter and 1 stick of margarine)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla (or 1/2 tsp of vanilla sugar)
  • 1 1/2 cups flour
  • 1 cup chopped nuts (pecans)

 

Directions:

1. Cream margarine; mix in sugar and vanilla then flour and nuts.

2. Form cookies the size of a pinky finger and bake 20-25 minutes or until edges are brown.

3. Cool and roll in powdered sugar (dredge them again for an extra layer of sugar if desired.)

Note: Dough should be like tacky playdo but if too sticky add a tablespoon of flour until easier to handle.

Ingredients
